Recipe:
2 Front Trotters
Ginger
Garlic cloves (10 or more is fine)
1-2 Cinnamon Bark
1-2 Dried Chilli
2-3 Cloves (not too many)
1 Star Anise (not too many)
A few Bay leaves
1 tbsp Sichuan Peppercorn
Dried Ginger (a few pieces, optional)
3-5 tbsp dark soy sauce*
3 tbsp light soy sauce*
1 tbsp sea salt
1 tbsp white pepper
3-6 tbsp Shaoxing wine
*depending on the sodium level of your sauce, you may not add too much or it will get too salty
