" Makara Sankranti " marks the arrival of spring season bidding adieu to chilling winter with mouth-watering traditional delicacies
Nuttiness made more intense by nutritive nourishing sesame balls
Ingredients
White sesame seeds 100g
Unsweetened khoya 100g
Powdered sugar 80g
Cashewnuts
Almonds
Cardamom
Saffron
Method
Heat a pan and dry roast the sesame seeds on a low flame
Keep stirring until the seeds pop up giving out a nice aroma
Allow it to cool and blend it to a coarse powder
Roast the cashew nuts and almonds
(note: almonds must be soaked in water, microwaved for 30 seconds, skinned out and finely chopped)
Fry the khoya for 4 - 5 minutes until it gives out a nice aroma
Transfer it into a bowl. Now add the coarsely powdered sesame seeds, powdered sugar and crushed cardamom
Mix it well. Make proportionate balls and top it with saffron strands
Sesame laddoos are now ready to serve
Keynote: Retain the colour of all ingredients without over frying while cooking to make the laddoos appear white in colour.
