One dough recipe that gives you different choices! You can prepare tortillas, pita bread, or mankouche following the same steps!

RECIPE
INGREDIENTS:
DOUGH:
4 cups flour
1 teaspoon salt
1 cup low-fat milk
1 cup water, add more if needed
1 teaspoon baking powder
2 tablespoons olive oil
ZAATAR MANKOUCHE:
1½ cups zaatar
Olive oil
PREPARATION:
DOUGH:
Mix the flour, baking powder, salt, water, and milk
Knead it by hand until it becomes a dough
In a bowl, put some olive oil, cover with a kitchen towel, and let the dough rest for 2 hours
Once rested, divide the dough into small balls
Let the dough balls rest 10 more minutes
Put some flour on a flat surface and roll each ball to create a flat thin dough
ARABIC PITA BREAD:
Heat the pan on the stove and place the flat dough on it. Once the dough starts to bubble, cover it with a lid and wait until it rises halfway, then, flip it to rise further
After baking each Arabic pita bread, cover it with a kitchen towel to keep it soft
TORTILLA WRAP:
Heat the pan on medium heat, and place the flat dough
When one side cooks, turn the wrap and leave it until the other side cooks too
After baking each tortilla, cover it with a kitchen towel to keep it soft
ZAATAR MANKOUCHE:
Follow the wrap steps above, then, when one side of the wrap becomes crunchy, flip it to the other side. Finally, add olive oil and zaatar
Serve when the bottom becomes crunchy
