Cashew Curry
Ingredients -
150g Cashew nuts ( soaked in hot water for 30mins)
1 Cup Green Peas
1 Medium Onion, thinly sliced
2 Green Chilies, Chopped
3 Cloves Garlic, Chopped
1 cup Thin Coconut Milk (add 1 Tbsp of Coconut Milk Powder Mix to 1 cup of warm water (250ml), stir well. if Canned Coconut Milk-Dilute it with 1/2 can water.)
1cup Thick Coconut Milk (add 3 Tbsp of Coconut Milk Powder Mix to 1 cup of warm water (250ml), stir well
2 tbsp Coconut Oil
1 tsp Cumin Seeds
½ tsp Fenugreek Seeds
½ tsp Turmeric Powder
2tsp Coriander powder
1 tsp unroasted Curry powder
Small Cinnamon stick
2 Crushed Cardamom Pods
Salt and Pepper to taste
Few Curry leaves
