Servings: 5 5 eggplants 3 tbsp olive oil 2 tsp salt 2 cup chopped onion 1 chopped garlic 2 cup jalapeno pepper 4 tomatoes violet basil 1 cup chopped parsley sugar dill PREPARATION *************** 1.Partly peel the eggplants and cut it in the middle with a knife. 2. arrange them in the pan. Grease 5 eggplants with olive oil. Sprinkle the salt on the eggplants. 3.Bake 450 °F (230 °C) 20 minutes. 4. Meanwhile, Put 2 tablespoons olive oil in a pan, 2 cups chopped onions, 1 chopped garlic and mix.Then add 2 cups jalapeno pepper. 5.Add 4 tomatoes and 3 violet basil mix and leave on for 10 minutes. 6.After cooking add 1 cup chopped parsley, 1 teaspoon salt and mix. 7. Sprinkle the sugar on the eggplants. Stuff the filling equally between eggplants. 8.Bake stuffed eggplants at 450 °F (230 °C) for 20 minutes. 9.
